I almost made that alfredo sauce by mistake the first time I did it. And honestly, it’s so easy and so good, I couldn’t keep it all for myself. It doesn’t require the usual soaked nuts or the endless list of ingredients, but only five ingredients any vegan is most likely to have in his or her pantry (only five if you forget about the spices)! Simply blitz it a minute or two in your blender, gently heat it up until rich and creamy and it will be ready by the time your pasta are cooked!
7 Ingredients Vegan Alfredo Sauce
makes enough for 2-3 pasta servings
3/4 cup of water and/or soy milk
1/2 cube of vegetable stock
1/4 cup of nutritional yeast
2 tbsp of cornstarch
freshly cracked black pepper, to taste
ground nutmeg, to taste (freshly grated one is even better if you happen to have some)
Put all the ingredients in a blender and mix until smooth.
Pour in a saucepan and bring to a low simmer at medium heat until it thickens, while stirring frequentlly to prevent from sticking to the bottom. Reduce the heat if needed. It should be ready within a couple of minutes only.
Pour over your favorite pasta and stir in. Adjust salt, pepper and nutmeg if needed.
